multitasking queen

I am writing this post in between shoving spoonfuls of my lunch in my mouth. I have to be quick otherwise, the day will go on without me being able to update a single blog.

We’ve been away for almost a week. We stayed at my in-laws and while being there, I didn’t find the time to blog. Now that we are home, I have to face the bunch of housework waiting for me. You see, when we left the house, we forgot to empty our fruit basket. As a result, our kitchen became a breeding ground of fruit flies. This is a mystery to me. I mean, I understand how the fruits got rotten. The weather has been very hot last week and the fruits were not able to stand the heat. But all our windows and doors have been closed the whole time. How did the fruit flies get in?

I was so disgusted that I decided not just to kill every single fruit fly but to clean the whole kitchen as well. It has been screaming for some cleaning anyway so that’s what I did during my baby’s first round of sleep. My baby is now on to his second round of sleep so here I am, eating and blogging at the same time. And oh, the laundry and the dish washing machine are running in the background. So that’s like shooting four birds with one bullet.

Today, I still like to accomplish the following housework: clean the toilet bowls, vacuum clean the living room including the sofa, vacuum clean the three rooms upstairs, iron some of our clothes, and do some organization because things are scattered everywhere.

That’s a bit over optimistic considering that I have a baby to take care of, but I really would like to do as much as I can today. Because this week, I also would like to do the following: clean the windows’ glass, clean the bathroom, and do a bit of organization in the basement because that place looks like a bomb just detonated in it. I HAVE TO get things done. REALLY.

when i need an asian tasting food

In attempt to catch up with the piling house chores, I did a lot of work today and I am beat. My body is telling me lie down and sleep but it’s already 7:30pm so I don’t want to take a nap now and be awake in the middle of the night. Instead, I will use my remaining energy to write a couple of blog entries.

When I saw Lamielle’s Sesame Green Beans with Chili a few days ago, I told myself that I am going to cook it so yesterday, I cooked it but since hubby surprised me by coming home early and taking me out to lunch, I was not able to eat it right away. Today, I had the chance to savor it and boy, did it taste great.

I swear, it looks and tastes better than it looks like on the photo. It’s probably just the crappy phone camera or the fact that I have reheated the food. I will be definitely cooking this again because it is healthy, easy to prepare and I can find all the ingredients in our local grocery store. This means, I don’t have to drive all the way tot the Asian store to get the ingredients.

pregnancy food cravings

Right now, I eat ice cream and sweets more than usual but other than those, I really don’t have strong cravings anymore. During the first trimester of my pregnancy, I really get upset and moody if I don’t get to eat what I crave for. And the problem was, most of the food I was craving back then were Filipino food.

It was a bit difficult because I can’t have all the ingredients I need for cooking Filipino food from the local grocery stores here. I have to go to the only Asian store in the city (25 minutes drive from our place) and they also have very limited stuff there. In my desperation, I sometimes just leave out an ingredient or two and just try really hard to get the taste I am craving for.

Here are some of the Filipino food I cooked during the first few months of my pregnancy.

The photos are of not the best quality because I only used what’s always within my reach—my phone.

I ate most of these food alone (not in one sitting though) but some of which I shared with my husband like the camote-q and the giniling. He’s quite choosy when it comes to food but when he tasted something he likes, he’ll eat a lot of it.

on this nice spring day

My husband has a day off today. He got one so that he can enjoy one of Spring’s first warm days. Yes, it is already spring here (finally!) and it is warm enough to walk around in a light sweater. This morning, we had walked to our community’s center (sa bayan, 15minutes walk from our place) and had a refreshing drink in one of the coffee shops there. It is really a lovely day here. Too nice that is ironic that a major natural catastrophe is happening on the other side of the world. I can’t help but think of my family back home. They are nowhere near the shore but even so; I still hope this catastrophe will not, in any way, affect them. Let’s all pray for all those who are affected by this natural disaster.

In other news, I am so caught up now with my Odesk jobs that I can’t update my blogs regularly (again). It’s true. As much as I want it, I just can’t cope with all demands of running my own blogs and my virtual jobs. Of course it is possible but considering that I am pregnant and that I am a fulltime wife (without maids), there are also some offline things I have to attend to: my husband, housework, my unborn baby, and myself.

Every time my husband is at home, I can’t really work anymore. He is not an attention seeking person but when he is home, we’d rather spend time with each other. Right now, he went to his hairdresser to get a haircut. It’ll take him an hour or less so I have this time to write an entry or two.

It’s already 3:30pm here and I am sitting in our balcony after that delicious late light lunch my husband prepared for us.

Kornspitz stuffed with rocula leaves, mozzarella cheese, ham, sliced cherry tomatoes, and light sour cream. A bit of balsamic vinegar, salt, and pepper were added too.

my lunch

This is my lunch. It’s quick to prepare and it’s delicious.

I normally eat rice with viand for lunch but today, I just can’t get past the different Mediterranean antipasti in our fridge so I decided to eat them instead.

Mixed Mediterranean antipasti for a quick fix

Dried tomatoes marinated in olive oil, black pitted olives, green olives stuffed with almonds, capers, and toasted bread dipped in olive oil.

Normally, you get a few of these as starters in restaurants. We also eat them as starters at home, but today I have a great craving for them that I am eating not only a few but a lot. LOL!

I think these are healthy food. They are high on calories, which is not at all bad because being pregnant, I need all the energy-producing food I can get.

heart’s day

Happy Heart’s Day everyone!

no special occasion but i got these tulips from my husband last week.

My husband bought these lovely tulips for me last week. There was no special occasion. He’s a sweet guy and he’s especially sweet to me this time because I am carrying his future offspring. But even before, he does not need an occasion to bring home flowers or some sweets. For this and everything he is, I am very lucky to have him.

Today is Valentine’s Day but I am not expecting anything. I think, I am overly pampered already, and so, it is just utterly unnecessary to pamper me even more today just because it’s Valentine’s Day.

So I will treat today as a regular Monday. There are house chores to do like ironing, vacuum cleaning, dusting, doing a small grocery, and some other things. I’ll try to do as much as I can because I want that when my husband comes home from work, everything’s clean and that our home is where he can have comfort in after a long tiring day at work. It’s my small way of reciprocating how nice and sweet he is to me.

healthy salad recipes

When I was a kid, I hated vegetables and there’s nobody in the world who can sweet talk me into eating those leafy, greenish thingy. My father might have threatened to spank me a couple of times, after begging me to at least try some veggies, but I supposed he gave up at some point.

With fruits, however; it’s different. I’ve always love fruits and I can eat just about any fruit presented to me. Give me the sourest, the stinkiest, or the weirdest tasking fruit and I will still eat it.

I think I started to eat vegetables in my early twenties and I can’t really remember how and why, but I supposed it has something to do with pancit bihon. Pancit bihon is a food I really like but when I was a kid, I would painstakingly separate the veggies and not eat them. Maybe at some point, I got lazy and decided to just put everything in my mouth (or maybe it was just out of politeness, or in the name of manners—not sure anymore). Something like that might have prompted me to eat veggies and realize that they are not that bad at all.

Right now, veggies are important part of my diet. I don’t have to have it every meal but I often craaaave for it. I also learned how to make some good tasking salads. Preparing salads is easy because it requires too little or no cooking at all. Sometimes, if we had a heavy lunch, a bowl of salad and a few slices of bread would already suffice for dinner. Here are some of my favorite salads and these are also the kinds I often prepare at home.

calamari and rocula salad: I copied this recipe from Don Camillo, our favorite italian restaurant here in Graz

cobb salad: I copied the recipe from one of our favorite restaurants in Shanghai, Elements Fresh

mozzarella and tomato with basil salad: common quick to prepare salad and it's very good too!

Here’s what’s in them:

Calamari and rocula Salad: Calami rings, grilled or quickly fried with a lot of garlic, mixed with rocula leaves, some olive oil, balsamic vinegar, salt and pepper.

Cobb salad: Lettuce (can’t see in the photo because they’re under the other ingredients), cheddar cheese, avocado, hard boiled eggs, paprika, bacon, salt, pepper. If you want you can also add some slices of fried chicken breast and carrots. Everything is cubed. Salad can be eaten with any dressing but i like it most with balsamic vinegar and olive oil.

Mozzarella and tomato with basil salad: This is really easy, just slice the tomatoes and mozzarella cheer and topped them with some fresh basil leaves. Pour a bit or olive oil and balsamic vinegar. Add some salt and pepper to taste.

a monday in the life of a stay-at-home wife

It’s Monday. Normally, it’s what I call my Lazy Day but since I had a lot of lazy days last week, I have to forget about making today a Lazy Day.

I had tons of laundry waiting to be ironed and that’s what I attended to this morning. I am actually not completely done with it yet but I am glad to see that I was able to finish half of it. I also vacuumed cleaned the whole place because I can already see strands of my long black hair lying just about everywhere.  Vacuum cleaning is something that is becoming more and more difficult for me to do, not because I’m becoming a pig but because when you’re pregnant, such things simply turn to huge challenges. My gosh! I thought my knees would collapse as I was vacuum cleaning the stairs!

I am really so glad I get to stay at home this time. I am so glad there is nothing in the world that is obliging me to work (day job). Yes, there are house chores and yes, some of them are difficult for me to do now, but I can take a break when I need it. I could also refuse and postpone house chores without thinking that somebody will fire me. LOL!

After ironing, and vacuum cleaning, I had taken a break and cooked myself lunch—fired fish and rice. Yum! Then, I loaded the washing machine and while it is running, I laid my yoga mat in the balcony, took some pillows, and my computer.

Being able to stay at home while I’m pregnant is a luxury. Like right now for example, I am sitting in our balcony while enjoying the sunshine and the warm weather, which is, by the way, so odd considering that it is winter now. We should be experiencing a deep winter this month (like every February) here in Austria but it feels like mid-spring already. I am not complaining about the weird weather… I am actually enjoying it and going back to my point… I would definitely NOT be able to enjoy such days like today if I have to go and work.

After I publish this entry, I will take a nap right here.
